


I am very pleased to share that the first batch of Zughaus kombucha was delightful! The flavor was earthy and tart, yet at the same time sweet and complex. The first batch only produced 2 bottles, which we drank last night. The first photo is the new SCOBY forming on my second batch! This batch will be ready to bottle on Sunday. I found that the carbonating process happened quite fast in my first two bottles. They were ready to drink in just 4 days sitting bottled and un-refrigerated. Anyways, soon I will have some extra kombucha mushrooms if anyone is interested in brewing your own... My recipie and instructions can be found

My good friend and creative colleague Anna Werner has come back to the Bay Area. I am so glad. Here is a photo of her taken by me, and a photo of me taken by her. She is better with a camera for sure. Anna is a wonderful creative person. Check back for many trans-continental collaborations and continuing idea exchange. Anna holds the title of "Academic Affairs
